This is the famous salad dressing recipe they serve at Chipotle Mexican Grille. When it comes to food and recipes, my view is that food and recipes should be treated like in a museum, where all the world can share them. Not to be hidden away so that the whole world can’t enjoy them.
1/2 Cup Red Wine Vinegar
1/3 Cup Honey
1 Tablespoon Fresh Oregano
1 Tablespoon Salt
1 teaspoon Black Pepper
1 minced Chipotle Pepper in Adobo sauce roughly 1 Tablespoon
1 1/2 Cup Salad Oil
Mix together in a bowl or blender all ingredients except salad oil. Salad Oil used in restaurants is basically a Soy Oil or Soy Oil blend, you can buy Soy Oil at any grocery store. You can use basically use any vegetable oil that you like, just not an oil like Olive Oil that has a strong flavor.
This is the kind I buy, but keep in mind on how spicy hot you want to make your dressing. You can add the Chipotle pepper at the end a little bit at a time so that you can taste how spicy hot you want to make your dressing. Sometimes I find it is hard to find at the store, but anyone can make a substitute here. The adobo is just the ingredient that makes it spicy hot, I have substituted other hot sauces before for basically the same taste. Such as Sriracha sauce. You will just have to add at the end a little bit at a time not to make the dressing overly spicy hot until the desired taste.
